create a release

Create a release so that we can clearly state which version has been used so far in our work.

If we make changes then we can also go back to the specific release.

@ChenouZhang can you please start the CHANGELOG? Only needs minimal entries to start with, namely you as an author and description of the functionality of the initial version. Then PR #5 can update.

I'd also recommend you add a file AUTHORS (similar to eg https://github.com/Becksteinlab/GromacsWrapper/blob/main/AUTHORS ).
