Support aind-data-schema 2.0 in [helpers]

aind-data-schema 2.0 is released, we need to update the [helpers] dependency to 2.0 and modify the data schema and docdb validation helpers accordingly.

Describe the solution you'd like

• Bump version
• Fix code to validate against aind-data-schema 2.0
• Fix tests

Describe alternatives you've considered
By not validating objects we could support multiple versions, or by allowing for validation failures and then parsing the schema_version field and acting accordingly.

Helen requested we block this until some other issues get released for v1, see: (#93 and #181, #106, #107)

The code for this is already in the PR but we can't merge until then.
